- For the Chocolate Cake:
- 2 cups all-purpose flour
- 2 cups granulated sugar
- 3/4 cup unsweetened cocoa powder
- 2 teaspoons baking powder
- 1 1/2 teaspoons baking soda
- 1 teaspoon salt
- 1 cup milk
- 1/2 cup vegetable oil
- 2 eggs
- 2 teaspoons vanilla extract
- 1 cup boiling water
- For the Butterscotch Frosting:
- 1/2 cup unsalted butter
- 1 cup packed brown sugar
- 1/4 teaspoon salt
- 1/4 cup milk
- 2 to 2 1/2 cups powdered sugar
- 1 teaspoon vanilla extract
- For Topping:
- 1/2 cup chopped pecans
- 1/4 cup chopped walnuts
- Preheat oven to 350°F (175°C). Grease and flour three 8-inch round cake pans.
- In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- Add milk, oil, eggs, and vanilla. Beat on medium speed for 2 minutes.
- Stir in boiling water until batter is well combined (it will be thin).
- Divide evenly into prepared pans and bake 30–35 minutes or until a toothpick comes out clean.
- Cool cakes in pans for 10 minutes, then transfer to wire racks to cool completely.
- In a saucepan over medium heat, melt butter and add brown sugar and salt. Cook while stirring for 2–3 minutes until sugar dissolves.
- Add milk, stir and bring to a boil. Remove from heat and let cool to room temperature.
- Beat in vanilla and gradually mix in powdered sugar until frosting is thick and spreadable.
- Place one cake layer on a serving plate. Spread a layer of butterscotch frosting on top. Repeat with remaining layers.
- Spread frosting over top and sides of the cake. Sprinkle chopped pecans and walnuts generously over the top.
