Ingredients

  • For the Chocolate Cake:
  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 1 cup milk
  • 1/2 cup vegetable oil
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • For the Butterscotch Frosting:
  • 1/2 cup unsalted butter
  • 1 cup packed brown sugar
  • 1/4 teaspoon salt
  • 1/4 cup milk
  • 2 to 2 1/2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • For Topping:
  • 1/2 cup chopped pecans
  • 1/4 cup chopped walnuts

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour three 8-inch round cake pans.
  2. In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add milk, oil, eggs, and vanilla. Beat on medium speed for 2 minutes.
  4. Stir in boiling water until batter is well combined (it will be thin).
  5. Divide evenly into prepared pans and bake 30–35 minutes or until a toothpick comes out clean.
  6. Cool cakes in pans for 10 minutes, then transfer to wire racks to cool completely.
  7. In a saucepan over medium heat, melt butter and add brown sugar and salt. Cook while stirring for 2–3 minutes until sugar dissolves.
  8. Add milk, stir and bring to a boil. Remove from heat and let cool to room temperature.
  9. Beat in vanilla and gradually mix in powdered sugar until frosting is thick and spreadable.
  10. Place one cake layer on a serving plate. Spread a layer of butterscotch frosting on top. Repeat with remaining layers.
  11. Spread frosting over top and sides of the cake. Sprinkle chopped pecans and walnuts generously over the top.
