  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ½ cup vegetable oil
  • ¾ cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 ½ cups shredded zucchini (lightly squeezed)
  • ¼ cup brown sugar
  • ¼ cup all-purpose flour (for streusel)
  • 2 tbsp cold butter
  • ½ tsp ground cinnamon (for streusel)

Instructions

  1. In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  2. In another bowl, whisk oil, sugar, eggs, and vanilla until smooth.
  3. Stir in shredded zucchini, then gradually add the dry ingredients.
  4. Mix brown sugar, flour, and cinnamon for the streusel topping. Cut in the butter until crumbly.
  5. Pour batter into a greased loaf pan, sprinkle streusel on top, and bake at 350°F (175°C) for 50–60 minutes. Cool before slicing.
