- ¼ cup all-purpose flour (for streusel)
- 2 tbsp cold butter
- ½ tsp ground cinnamon (for streusel)
- In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
- In another bowl, whisk oil, sugar, eggs, and vanilla until smooth.
- Stir in shredded zucchini, then gradually add the dry ingredients.
- Mix brown sugar, flour, and cinnamon for the streusel topping. Cut in the butter until crumbly.
- Pour batter into a greased loaf pan, sprinkle streusel on top, and bake at 350°F (175°C) for 50–60 minutes. Cool before slicing.
