2½ cups all-purpose flour
2½ tsp baking powder
½ tsp salt
¾ cup unsalted butter, softened
1¾ cups sugar
4 large eggs
1 tbsp vanilla extract
1 cup milk
1½ cups white chocolate, melted and cooled
1 cup unsalted butter, softened
3 cups powdered sugar
2 tbsp milk or cream
1 tsp vanilla extract
1 cup crushed peppermint candy
1 cup raspberry or cranberry jam (optional)
White chocolate curls or shavings
Extra peppermint for garnish
Instructions
Preheat oven to 350°F (175°C). Grease and line three 8-inch round cake pans.
In a bowl, sift flour, baking powder, and salt. In a separate bowl, cream butter and sugar until light and fluffy. Add eggs one at a time, then stir in vanilla.
Alternate adding the dry mixture and milk into the butter mixture. Mix until just combined. Divide evenly between pans and bake 20–25 minutes. Cool completely.
Beat butter until creamy. Gradually add powdered sugar. Mix in cooled white chocolate, vanilla, and milk until smooth and fluffy.
Spread jam on each cake layer if using. Add frosting and sprinkle peppermint between layers. Stack and cover the entire cake with frosting.
Decorate the top with piped frosting, crushed peppermint, and white chocolate curls. Chill briefly to set.
Notes
Use a dairy-free white chocolate and plant-based butter for a vegan version.
