1 1/2 cups vanilla cake crumbs (from any plain vanilla sponge or cupcakes)
4 tablespoons cream cheese, softened
1/2 cup cherry jam or preserves (thick texture works best)
12 oz white chocolate, chopped or in chips
Red and white sprinkles, for decorating
Instructions
In a bowl, mix cake crumbs and cream cheese until a soft dough forms. Chill for 10 minutes.
Scoop out tablespoon-sized portions and flatten slightly. Place a small dollop of cherry jam in the center, then wrap the dough around to seal and roll into a ball.
Freeze the balls for 15–20 minutes until firm.
Melt white chocolate gently over a double boiler or in 20-second microwave bursts, stirring until smooth.
Dip each chilled ball into the melted white chocolate using a fork. Tap off excess and place on parchment paper.
Immediately top with red and white sprinkles before the chocolate sets. Chill until firm.
Notes
Use a piping bag for cherry filling for neater shaping.
Swap cherry with raspberry or strawberry jam for variation.
Store in an airtight container in the fridge for up to 5 days.
