- 2 tbsp olive oil
- 1 lb boneless skinless chicken breast, cooked and shredded
- 1 small onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 2 cups milk
- 1 cup heavy cream
- 1 tsp Italian seasoning
- 1/2 tsp crushed red pepper flakes (optional)
- 8 lasagna noodles, broken into bite-sized pieces
- 1 1/2 cups shredded mozzarella
- 1/2 cup grated Parmesan
- 1 cup ricotta cheese
- Salt & pepper to taste
- Fresh parsley, chopped (for garnish)
- Heat olive oil in a large pot over medium heat. Add diced onion and garlic, and cook until fragrant.
- Pour in chicken broth, milk, and cream. Stir in Italian seasoning and red pepper flakes. Simmer gently.
- Toss in broken lasagna noodles and simmer until tender.
- Stir in mozzarella and Parmesan until melted.
- Fold in ricotta and shredded chicken. Let it warm through and garnish with fresh parsley.
Notes
- This soup is a one-pot dinner win that’s easier than layering traditional lasagna.
- Adjust the amount of crushed red pepper flakes to your spice preference.
