Ingredients

  • 2 tbsp olive oil
  • 1 lb boneless skinless chicken breast, cooked and shredded
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups milk
  • 1 cup heavy cream
  • 1 tsp Italian seasoning
  • 1/2 tsp crushed red pepper flakes (optional)
  • 8 lasagna noodles, broken into bite-sized pieces
  • 1 1/2 cups shredded mozzarella
  • 1/2 cup grated Parmesan
  • 1 cup ricotta cheese
  • Salt & pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onion and garlic, and cook until fragrant.
  2. Pour in chicken broth, milk, and cream. Stir in Italian seasoning and red pepper flakes. Simmer gently.
  3. Toss in broken lasagna noodles and simmer until tender.
  4. Stir in mozzarella and Parmesan until melted.
  5. Fold in ricotta and shredded chicken. Let it warm through and garnish with fresh parsley.

Notes

  • This soup is a one-pot dinner win that’s easier than layering traditional lasagna.
  • Adjust the amount of crushed red pepper flakes to your spice preference.
  • Garnish with additional cheese or herbs if desired.
