Ingredients

  • 1 tbsp olive oil
  • 1 small onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, sliced
  • 2 cloves garlic, minced
  • 1 zucchini, diced
  • 1 yellow squash, diced (optional)
  • 1 can (14.5 oz) diced tomatoes
  • 6 cups vegetable broth
  • ¾ cup dry orzo pasta
  • 1 tsp dried thyme
  • ½ tsp dried basil
  • Salt & black pepper to taste
  • ½ cup corn (fresh or frozen)
  • Chopped parsley for garnish

Instructions

  1. In a large pot, heat olive oil. Add onion, carrot, and celery, and cook until softened.
  2. Stir in the garlic, thyme, and basil.
  3. Add diced tomatoes and broth. Bring to a boil, then lower heat and simmer for 10 minutes.
  4. Stir in orzo and corn. Simmer another 10–12 minutes until pasta is tender.
  5. Add zucchini and yellow squash in the last 5 minutes. Garnish with parsley and serve hot.

Notes

  • This soup can be customized with your favorite vegetables.
  • For a heartier version, add beans or lentils.
  • Store leftovers in the refrigerator for up to 3 days.
