2 sheets puff pastry, thawed
2 1/2 cups whole milk
1/2 cup sugar
1/4 cup cornstarch
1/4 cup all-purpose flour
4 large egg yolks
1 tsp vanilla extract
2 tbsp unsalted butter
Powdered sugar, for dusting
Instructions
Preheat oven to 400°F (200°C). Place puff pastry sheets on baking trays lined with parchment paper. Prick all over with a fork. Top with another sheet of parchment and a second tray to prevent puffing. Bake for 15–20 minutes until golden. Let cool, then trim to fit your pan.
In a saucepan, combine sugar, cornstarch, and flour. Add milk gradually, whisking until smooth.
In a separate bowl, whisk egg yolks. Add a little of the warm milk mixture to the yolks, whisking constantly to temper. Return yolk mixture to saucepan.
Cook over medium heat, whisking constantly until thick and bubbling. Remove from heat, stir in butter and vanilla until smooth.
Line a square dish with one sheet of baked pastry. Pour custard over, smooth the top, then layer the second sheet of pastry on top. Chill for 4 hours or overnight until firm.
Dust with powdered sugar just before serving. Slice with a sharp knife for clean layers.
