Elegant, creamy, and perfectly balanced vanilla cream berry tart topped with fresh berries and toasted almonds.

Ingredients

  • 1¼ cups flour
  • ¼ cup powdered sugar
  • ½ cup cold butter, cubed
  • 1 egg yolk
  • 12 tbsp cold water
  • 1½ cups milk
  • 3 egg yolks
  • ⅓ cup sugar
  • 2 tbsp cornstarch
  • 1 tsp vanilla extract
  • 1 tbsp butter
  • ½ cup blueberries
  • ½ cup raspberries
  • 2 tbsp toasted almonds
  • Powdered sugar, for dusting

Instructions

  1. Pulse flour & sugar, add butter until crumbly. Add yolk & water to form dough. Chill 30 min.
  2. Roll out, press into pan, prick base. Freeze 15 min.
  3. Bake at 375°F (190°C) for 25 min until golden. Cool completely.
  4. Heat milk. Whisk yolks, sugar, cornstarch; slowly add milk. Cook until thick. Add vanilla & butter. Chill covered.
  5. Fill tart with cream. Add berries & almonds. Dust with sugar before serving.

Notes

  • Chill cream completely before filling
  • Use fresh berries for best texture
  • Keep refrigerated until serving
