1¾ cups all-purpose flour
1¾ cups sugar
¾ cup unsweetened cocoa powder
1½ teaspoons baking powder
1½ teaspoons baking soda
1 teaspoon salt
2 eggs
1 cup milk
½ cup vegetable oil
2 teaspoons vanilla extract
1 cup hot coffee
2 cups heavy cream, cold
1 cup mascarpone or cream cheese
½ cup powdered sugar
1 teaspoon vanilla extract
¾ cup heavy cream
6 oz dark or milk chocolate, chopped
1 tablespoon butter
Instructions
Preheat oven to 175°C / 350°F. Mix dry ingredients. Add eggs, milk, oil, and vanilla. Stir in hot coffee last. Pour into a lined baking pan and bake for 30–35 minutes. Cool completely.
Whip cream with powdered sugar and vanilla until soft peaks. Gently fold in mascarpone until smooth and fluffy.
Slice cake horizontally. Spread thick layer of vanilla cream in the middle. Place second layer on top.
Heat cream until steaming. Pour over chocolate and butter. Stir until glossy and smooth. Spread over cake.
Pipe whipped cream rosettes and chocolate swirls if desired. Chill for at least 2 hours before slicing.
Notes
Chill before cutting for bakery-perfect layers.
