Crispy, saucy, messy-in-the-best-way and absolutely addictive ULTIMATE LOADED CHILI CHEESE FRIES.

Ingredients

  • 1.5 lbs frozen or fresh fries
  • Salt, to taste
  • 1 lb ground beef (or beef & pork mix)
  • 1/2 small onion, finely diced
  • 2 garlic cloves, minced
  • 1 teaspoon chili powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon cumin
  • Salt and black pepper to taste
  • 1/2 cup crushed tomatoes or tomato sauce
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 cup whole milk
  • 1½ cups shredded cheddar (or cheddar + Monterey Jack)
  • 1/2 teaspoon smoked paprika
  • 1 tablespoon hot sauce (optional)
  • Diced white onion (for topping)
  • Chopped parsley or cilantro (for topping)
  • Jalapeños (optional, for topping)
  • Extra hot sauce or chili flakes (for topping)

Instructions

  1. Cook fries according to package directions (or fry until golden and ultra-crispy). Salt immediately.
  2. While fries cook, heat a skillet over medium heat. Brown ground beef with onion until fully cooked.
  3. Add garlic, chili powder, paprika, cumin, salt, and pepper. Stir in crushed tomatoes and simmer 5–7 minutes until thick and rich.
  4. In a saucepan, melt butter over medium heat. Whisk in flour and cook 1 minute.
  5. Slowly whisk in milk until smooth. Stir in cheese, paprika, and hot sauce until melted and silky.
  6. Pile fries onto a large serving plate or bowl.
  7. Spoon chili generously over fries, then drizzle with hot cheese sauce like you mean it.
  8. Finish with diced onion, herbs, and any extra toppings.

  • Bake fries extra crisp so they hold the sauce.
  • Swap beef for shredded chicken or plant-based crumbles.
