  • 1 lb (450g) ground beef (80/20 blend)
  • Salt and black pepper to taste
  • 4 slices cheddar cheese
  • 4 slices American cheese
  • 2 brioche burger buns
  • 1 tablespoon butter (for toasting buns)
  • 1/2 cup sliced onions
  • 1 cup shredded iceberg lettuce
  • 1/3 cup mayonnaise (for burger sauce)
  • 2 tablespoons ketchup (for burger sauce)
  • 1 tablespoon mustard (for burger sauce)
  • 1 teaspoon pickle juice (for burger sauce)
  • 1/2 teaspoon garlic powder (for burger sauce)
  • Pinch smoked paprika (for burger sauce)

Instructions

  1. Divide ground beef into 4 equal portions and gently form thin patties slightly larger than buns. Season both sides with salt and pepper.
  2. Heat a skillet or grill pan over medium-high heat.
  3. Cook patties 2–3 minutes per side until nicely seared.
  4. Place cheddar on two patties and American cheese on the other two. Cover briefly to melt.
  5. Stack one patty on top of another to create two double stacks.
  6. Butter brioche buns and toast until golden.
  7. Mix all sauce ingredients until smooth.
  8. Spread sauce on both sides of buns. Layer lettuce, onions, double patties, and extra sauce.
  9. Close buns, press gently, and serve immediately while cheese is gloriously melty.
