For the Chicken:
2 boneless chicken breasts
1 tbsp olive oil
1/2 tsp paprika
1/2 tsp garlic powder
1/2 tsp dried thyme
Salt and pepper to taste
For the Garlic Potatoes:
1 lb baby potatoes, halved
1 tbsp olive oil
1/2 tsp garlic powder
1/2 tsp oregano
Salt and black pepper to taste
Fresh parsley, for garnish
For the Creamy Spinach Pasta:
8 oz penne pasta
2 cups fresh spinach, chopped
2 tbsp butter
2 cloves garlic, minced
1 cup heavy cream
1/2 cup grated Parmesan cheese
Salt and pepper to taste
1/4 tsp nutmeg (optional)
Instructions
Preheat oven to 400°F (200°C). Toss halved potatoes with olive oil, garlic powder, oregano, salt, and pepper. Spread on baking sheet and roast for 25–30 minutes until crispy and golden.
Meanwhile, season chicken breasts with paprika, garlic powder, thyme, salt, and pepper. Heat olive oil in a grill pan or skillet, cook chicken 5–6 minutes per side until golden and cooked through. Let rest, then slice.
Cook pasta according to package directions. Drain and set aside.
In a skillet, melt butter and sauté garlic until fragrant. Add chopped spinach and cook until wilted. Pour in cream and bring to a gentle simmer. Stir in Parmesan, salt, pepper, and nutmeg if using. Simmer until sauce thickens slightly.
Toss cooked pasta into the creamy spinach sauce. Serve with sliced grilled chicken on top and roasted garlic potatoes on the side. Garnish with chopped parsley.
