Ukrainian Borscht Soup is a hearty and vibrant traditional beet soup that serves as the ultimate comfort food, featuring a rich broth and a medley of vegetables.

Ingredients

  • 1 lb beef chuck or shank, with bone
  • 8 cups water
  • 2 medium beets, peeled and diced
  • 2 medium potatoes, peeled and chopped
  • 1 large carrot, sliced
  • 1/4 small red cabbage, shredded
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tbsp tomato paste
  • 2 tbsp vinegar (white or apple cider)
  • 1 tsp sugar
  • 2 bay leaves
  • Salt and black pepper to taste
  • Fresh dill, chopped (for garnish)
  • Sour cream (for topping)

Instructions

  1. In a large pot, add the beef and water, then bring to a boil. Skim off the foam, then simmer with bay leaves until beef is tender.
  2. Remove beef, shred it, and return to the pot. Add beets, potatoes, and carrots. Let it simmer until veggies are soft.
  3. In a skillet, cook onion and garlic in oil until golden. Stir in tomato paste, vinegar, and sugar.
  4. Add the sautéed mix and shredded cabbage to the soup. Simmer everything together for another 15 minutes.
  5. Ladle into bowls, top with a dollop of sour cream, a sprinkle of fresh dill, and serve with dark rye bread.

Notes

  • For a vegetarian version, omit the beef and use vegetable broth.
  • Adjust the vinegar and sugar to taste for desired sweetness and acidity.
