Twice Baked Potatoes are warm, cheesy, loaded with toppings, and utterly comforting! A perfect dish for any occasion.

Ingredients

  • 4 large russet potatoes
  • 120 g sour cream
  • 60 ml whole milk
  • 40 g unsalted butter
  • 100 g shredded cheddar cheese, divided
  • 1 g garlic powder
  • Salt and pepper to taste
  • 4 strips cooked beef bacon, crumbled
  • 10 g chopped chives

Instructions

  1. Preheat oven to 200°C (400°F). Bake potatoes for 45–50 minutes until tender.
  2. Scoop out flesh, mash with sour cream, milk, butter, half the cheese, garlic, salt, and pepper.
  3. Spoon mixture back into the shells, top with remaining cheese and bacon. Bake for 15–20 minutes until golden.
  4. Garnish with chives and serve hot.

Notes

  • For extra crisp skins, brush with butter before the second bake.
  • Add jalapeños for a spicy twist.
