Tuscan Lobster Pasta is a creamy and dreamy dish packed with bold flavors, featuring succulent lobster, sun-dried tomatoes, and fresh spinach.

Ingredients

  • 12 oz pappardelle or tagliatelle pasta
  • 1 lb cooked lobster tail meat, chopped
  • 1 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 small shallot, finely chopped
  • 1 cup sun-dried tomatoes (in oil), chopped
  • 3 cups fresh spinach
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/2 tsp crushed red pepper flakes (optional)
  • Salt & pepper, to taste
  • 2 tbsp unsalted butter
  • 1/4 cup fresh chopped parsley
  • Zest of 1 lemon

Instructions

  1. Boil & Prep the Pasta: Cook pasta until al dente and reserve 1/2 cup pasta water.
  2. Sauté Aromatics: Heat olive oil in a large skillet, add shallots and garlic, and sauté until fragrant.
  3. Create the Creamy Base: Add sun-dried tomatoes and butter, then stir in heavy cream and Parmesan cheese.
  4. Toss in the Lobster & Spinach: Add lobster chunks and spinach, letting spinach wilt and lobster warm through.
  5. Bring it All Together: Toss in cooked pasta, add reserved pasta water as needed, season with salt, pepper, lemon zest, and parsley.

Notes

  • For a spicier kick, add more crushed red pepper flakes.
  • Ensure the lobster is cooked and chopped before adding to the sauce.
