- 12 oz pappardelle or tagliatelle pasta
- 1 lb cooked lobster tail meat, chopped
- 1 tbsp olive oil
- 3 cloves garlic, minced
- 1 small shallot, finely chopped
- 1 cup sun-dried tomatoes (in oil), chopped
- 3 cups fresh spinach
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/2 tsp crushed red pepper flakes (optional)
- Salt & pepper, to taste
- 2 tbsp unsalted butter
- 1/4 cup fresh chopped parsley
- Zest of 1 lemon
Instructions
- Boil & Prep the Pasta: Cook pasta until al dente and reserve 1/2 cup pasta water.
- Sauté Aromatics: Heat olive oil in a large skillet, add shallots and garlic, and sauté until fragrant.
- Create the Creamy Base: Add sun-dried tomatoes and butter, then stir in heavy cream and Parmesan cheese.
- Toss in the Lobster & Spinach: Add lobster chunks and spinach, letting spinach wilt and lobster warm through.
- Bring it All Together: Toss in cooked pasta, add reserved pasta water as needed, season with salt, pepper, lemon zest, and parsley.

- For a spicier kick, add more crushed red pepper flakes.
- Ensure the lobster is cooked and chopped before adding to the sauce.
