Ingredients

  • 1 pound ground turkey
  • 2 medium zucchinis, diced
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 can (14.5 oz) diced tomatoes
  • 1 small onion, chopped
  • 2 garlic cloves, minced
  • 1 tbsp olive oil
  • 1 tsp cumin
  • 1/2 tsp paprika
  • 1/2 tsp chili flakes (optional)
  • Salt & black pepper to taste
  • Fresh parsley or cilantro, chopped (for garnish)

Instructions

  1. In a large skillet, heat olive oil over medium heat. Add onion and garlic, sautéing until soft and fragrant.
  2. Add the ground turkey and cook until browned and fully cooked. Season with cumin, paprika, salt, and chili flakes.
  3. Stir in the diced zucchini and cook for about 5–6 minutes until tender.
  4. Pour in the diced tomatoes (with juice) and chickpeas. Stir well and let simmer for 10 minutes.
  5. Taste and adjust seasoning. Garnish with fresh parsley or cilantro and serve warm.
