2 cups cooked turkey, finely chopped
3 cups prepared stuffing (your favorite boxed or homemade)
1/2 cup dried cranberries (or chopped fresh)
1/4 cup finely diced onion
1/4 cup chopped fresh parsley
2 large eggs
1/2 tsp garlic powder
1/2 tsp poultry seasoning
Salt & black pepper to taste
2 tbsp olive oil or melted butter (for brushing or pan-frying)
Optional: turkey gravy or cranberry sauce for dipping
Instructions
In a large mixing bowl, combine chopped turkey, stuffing, cranberries, onion, parsley, eggs, and seasonings.
Using your hands or a cookie scoop, roll mixture into golf-ball-sized portions.
For crispy edges, pan-fry in a little oil over medium heat until golden on all sides (about 3–4 minutes) or bake at 375°F for 20–25 minutes, flipping halfway.
Serve warm with a side of gravy or a dollop of cranberry sauce.
Garnish with extra parsley or toasted pecans if desired.
Notes
These stuffing balls are perfect for using up leftover turkey.
They can be made ahead of time and frozen for later use.
