  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1/2 onion, thinly sliced
  • 2 garlic cloves, minced
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1/2 tsp ground cumin
  • Salt and pepper to taste
  • 2 tbsp fresh chopped cilantro (optional)

Instructions

  1. Heat olive oil in a large skillet. Add onions and garlic, cooking until fragrant.
  2. Add the ground turkey, breaking it apart as it cooks. Season with smoked paprika, cumin, salt, and pepper.
  3. Toss in the sliced red, yellow, and green bell peppers. Sauté until tender-crisp.
  4. Let everything cook for another 5 minutes to blend flavors.
  5. Sprinkle with chopped cilantro and serve hot!
