  • ¾ cup unsweetened cocoa powder
  • 2 tsp baking powder
  • 1 ½ tsp baking soda
  • ½ tsp salt
  • 1 ¾ cups sugar
  • 2 large eggs
  • 1 cup milk
  • ½ cup vegetable oil
  • 2 tsp vanilla extract
  • 1 cup hot water
  • 1 ½ cups heavy whipping cream (for mousse filling)
  • 1 cup semi-sweet chocolate chips, melted and slightly cooled (for mousse filling)
  • 2 tbsp powdered sugar (for mousse filling)
  • ¾ cup semi-sweet chocolate chips (for ganache topping)
  • ½ cup cream (for ganache topping)
  • ½ cup chocolate buttercream (optional for piping)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and line three 8-inch round cake pans.
  2. In a large bowl, whisk together flour, cocoa, baking powder, baking soda, salt, and sugar.
  3. Add eggs, milk, oil, and vanilla. Mix until smooth. Gradually add hot water, mixing until the batter is thin and silky.
  4. Divide into pans and bake 28–30 minutes or until a toothpick comes out clean. Let cool completely.
  5. For mousse filling: Whip cold cream and powdered sugar to stiff peaks. Gently fold in melted chocolate until smooth. Chill until set.
  6. For ganache: Heat cream until steaming, pour over chocolate chips. Let sit 2 mins, then stir smooth. Cool slightly before using.
  7. Layer cake with chocolate mousse, frost the top with ganache, and pipe chocolate swirls if desired.
