1½ lbs ground beef (80/20)
Salt & pepper
1 tbsp oil or melted butter
12 slices cheddar or cheese blend
18–20 slices beef sausage or pepperoni
6 slices white sandwich or sourdough bread
2 tbsp softened butter
½ cup mayo
2 tbsp ketchup
1 tsp mustard
1 tsp garlic powder
½ tsp smoked paprika
Salt to taste
Instructions
Make the sauce: Mix mayo, ketchup, mustard, garlic powder, smoked paprika, and salt. Set aside.
Smash the patties: Form ground beef into 6 loose balls. Heat a skillet over high heat with oil or butter. Smash each ball flat, season, and cook 2–3 minutes per side. Top with cheese to melt.
Toast the bread: Spread softened butter on bread slices. Toast in a skillet until golden on one side.
Assemble the melt: Place toasted bread (buttered side down). Add sauce → cheesy patty → sausage/pepperoni slices → more cheese. Repeat layers. Top with another toasted bread slice.
Grill: Cook assembled sandwich over medium heat until bread is crisp and cheese is fully melted through. Let rest, slice, and serve hot.
Notes
Serve with fries, wedges, or onion rings.
Add pickles for tangy crunch.
Drizzle extra sauce on the side for dipping.
Smash patties quickly while pan is very hot.
Use sourdough for the crispiest melt.
Layer cheese between everything for maximum melt effect.
