4 medium russet potatoes
3 tbsp olive oil or melted butter
1 tsp garlic powder
1 tsp smoked paprika
1/2 tsp black pepper
1 tsp salt
2 tbsp chopped fresh parsley
1/4 cup grated Parmesan cheese
Optional: chili flakes or ranch seasoning for a spicy twist
Instructions
Insert a skewer through the center of each potato. Cut in a spiral motion while rotating.
Gently spread the spirals apart. Brush with olive oil, then season with garlic powder, paprika, salt, and pepper.
Place on a lined baking sheet and bake at 375°F (190°C) for 35–40 minutes or until edges are crisp.
Sprinkle with Parmesan while hot so it melts. Add parsley and chili flakes if desired.
