4 large eggs
1 cup sugar
1 tsp vanilla extract
1 cup all-purpose flour
1 tsp baking powder
Pinch of salt
1 cup strong brewed coffee (cooled)
1 tbsp maple syrup or date syrup
500g mascarpone cheese
1 cup heavy whipping cream
1/2 cup powdered sugar
1 tsp vanilla extract
Unsweetened cocoa powder (for dusting)
Fresh mint leaves (for garnish)
Instructions
Preheat oven to 350°F (175°C). Line two 8-inch round pans with parchment paper.
In a bowl, beat eggs, sugar, and vanilla until thick and pale. Sift in flour, baking powder, and salt. Fold gently to combine.
Divide batter between pans and bake 18–20 minutes, until lightly golden. Cool completely.
Brew coffee and mix in maple syrup. Set aside.
Beat mascarpone, powdered sugar, and vanilla until smooth. In a separate bowl, whip cream to stiff peaks, then fold into mascarpone mixture.
To assemble: Place one cake layer on a plate, brush generously with coffee mix, spread half the cream, repeat with second layer, then top with remaining cream.
Chill at least 4 hours or overnight. Dust with cocoa powder and garnish with fresh mint before serving.
Notes
Let cake chill overnight for clean slices.
Use instant espresso powder for deeper coffee flavor.
Substitute sponge with ladyfingers for a quicker version.
