Thai Sweet Chili Chicken Thighs are a flavorful and easy weeknight dinner with a perfect balance of sweet and spicy flavors.

  • 6 boneless chicken thighs
  • ⅓ cup Thai sweet chili sauce
  • 2 tbsp soy sauce
  • 2 cloves garlic, minced
  • 1 tbsp honey
  • 1 tbsp lime juice
  • 1 tbsp sesame oil
  • 1 tsp grated ginger
  • 1 tbsp sesame seeds
  • 2 green onions, sliced
  • Cooked jasmine rice for serving

Instructions

  1. Make the Sweet Chili Marinade: In a bowl, whisk sweet chili sauce, soy sauce, honey, garlic, ginger, sesame oil, and lime juice.
  2. Marinate the Chicken: Place chicken thighs in the marinade and toss until coated. Let sit for at least 20 minutes.
  3. Sear the Chicken: Heat a skillet over medium-high heat and cook chicken for 5–6 minutes per side until golden and slightly caramelized.
  4. Glaze & Simmer: Pour remaining marinade into the pan and simmer until thick and glossy.
  5. Garnish & Serve: Sprinkle sesame seeds and green onions on top. Serve over jasmine rice.
