2 large flour tortillas
2 cups cooked, shredded chicken breast
1 cup cooked jasmine or basmati rice (cooled)
½ cup shredded carrots
½ cup shredded purple cabbage
¼ cup chopped green onions
¼ cup chopped cilantro
¼ cup crushed peanuts (plus more for garnish)
For the Thai Peanut Sauce:
¼ cup creamy peanut butter
1 tbsp soy sauce
1 tbsp rice vinegar
1 tbsp honey
1 tsp sesame oil
1–2 tsp sriracha (to taste)
1 clove garlic, grated
2–3 tbsp warm water (to thin sauce)
Instructions
Whip Up the Peanut Sauce: In a bowl, whisk peanut butter, soy sauce, honey, rice vinegar, sesame oil, garlic, and sriracha. Add warm water until creamy and pourable.
Build the Filling Base: In a large bowl, combine shredded chicken, cooked rice, carrots, cabbage, cilantro, and green onions. Drizzle in half the sauce and toss to coat.
Wrap It Like a Pro: Lay tortillas flat and divide filling evenly. Drizzle with extra peanut sauce and a handful of crushed peanuts. Fold burrito-style and toast in a dry skillet for a crispy finish.
Slice & Serve: Cut each wrap in half, garnish with more sauce and peanuts, and serve warm or chilled.
Meal Prep Magic: These wraps hold up great in the fridge for 2–3 days, making them perfect for meal prep.
Notes
Adjust sriracha to your preferred spice level.
For a gluten-free option, use gluten-free soy sauce and tortillas.
Toasting the wraps gives them a crispy texture but is optional.
