Ingredients

  • 1 tbsp coconut oil
  • 1 lb shredded cooked chicken (rotisserie works great!)
  • 1 can (13.5 oz) full-fat coconut milk
  • 3 cups chicken broth
  • 2 tbsp red curry paste
  • 1 red bell pepper, thinly sliced
  • 1 jalapeño, sliced (optional for heat)
  • ½ red onion, chopped
  • 2 garlic cloves, minced
  • 1 tbsp fresh ginger, grated
  • 1 tbsp fish sauce
  • 1 tbsp soy sauce or tamari (for gluten-free)
  • Juice of 1 lime
  • Fresh cilantro, chopped (for garnish)
  • Lime wedges for serving
  • Salt to taste

Instructions

  1. Heat coconut oil in a large pot. Toss in onion, garlic, and ginger for a bold flavor-packed start.
  2. Add the red curry paste and stir until fragrant.
  3. Pour in coconut milk and chicken broth. Stir in fish sauce, soy sauce, and lime juice.
  4. Drop in the red pepper, jalapeño, and cooked chicken. Let it simmer gently for 10–15 minutes until the veggies are tender.
  5. Ladle into bowls and top with fresh cilantro and lime wedges.

Notes

  • For a spicier soup, add more jalapeño or red curry paste.
  • Serve with rice for a heartier meal.
  • Can be made gluten-free by using tamari instead of soy sauce.
