- 1 lb shredded cooked chicken (rotisserie works great!)
- 1 can (13.5 oz) full-fat coconut milk
- 3 cups chicken broth
- 2 tbsp red curry paste
- 1 red bell pepper, thinly sliced
- 1 jalapeño, sliced (optional for heat)
- ½ red onion, chopped
- 2 garlic cloves, minced
- 1 tbsp fresh ginger, grated
- 1 tbsp fish sauce
- 1 tbsp soy sauce or tamari (for gluten-free)
- Juice of 1 lime
- Fresh cilantro, chopped (for garnish)
- Lime wedges for serving
- Salt to taste
- Heat coconut oil in a large pot. Toss in onion, garlic, and ginger for a bold flavor-packed start.
- Add the red curry paste and stir until fragrant.
- Pour in coconut milk and chicken broth. Stir in fish sauce, soy sauce, and lime juice.
- Drop in the red pepper, jalapeño, and cooked chicken. Let it simmer gently for 10–15 minutes until the veggies are tender.
- Ladle into bowls and top with fresh cilantro and lime wedges.
