1kg oxtail pieces
2 carrots (diced)
1 onion (chopped)
3 garlic cloves (minced)
2 tbsp tomato paste
1 tsp smoked paprika
500ml beef broth
200g cooked macaroni
150g cheddar cheese (shredded)
100ml milk
1 egg
Instructions
In a heavy pot, sear oxtail pieces until browned. Add carrots, onion, and garlic. Stir in tomato paste and spices, then pour in broth.
Cover and braise on low heat for 3–4 hours until the oxtail is fall-apart tender and the sauce is thick and rich. Remove bones and shred meat.
In a bowl, mix cooked macaroni, cheddar, milk, and egg to form a cheesy topping.
Spoon oxtail mixture into ramekins or a baking dish. Top each with mac & cheese mixture.
Bake at 375°F (190°C) for about 25 minutes until golden and bubbling.
Notes
For a creamier crust, mix in a little extra cheddar before baking.
Braise oxtail a day ahead to deepen flavor.
Let pies rest 10 minutes before serving to set the layers.
