  • Salt & black pepper to taste
  • 1 lb ground beef or turkey
  • 2 tsp taco seasoning
  • 1 ripe avocado, sliced
  • ¾ cup cottage cheese (or Greek yogurt for a twist)
  • Fresh chopped cilantro
  • Crushed red pepper flakes (optional, for heat)
  • Cooked rice or cauliflower rice (base)

Instructions

  1. Roast the Sweet Potatoes: Toss sweet potato cubes in olive oil, smoked paprika, garlic powder, salt, and pepper. Roast at 400°F for 25 minutes until golden and tender.
