2 medium sweet potatoes, peeled & diced
1 tbsp olive oil
1 tsp smoked paprika
½ tsp garlic powder
Salt & black pepper to taste
1 lb ground beef or turkey
2 tsp taco seasoning
1 ripe avocado, sliced
¾ cup cottage cheese (or Greek yogurt for a twist)
Fresh chopped cilantro
Crushed red pepper flakes (optional, for heat)
Cooked rice or cauliflower rice (base)
Instructions
Roast the Sweet Potatoes: Toss sweet potato cubes in olive oil, smoked paprika, garlic powder, salt, and pepper. Roast at 400°F for 25 minutes until golden and tender.
Brown the Meat: In a skillet, cook ground beef or turkey over medium-high heat until browned. Stir in taco seasoning and a splash of water. Simmer for 3-4 minutes.
Build Your Bowl: Start with rice or cauliflower rice, then pile on roasted sweet potatoes, savory taco meat, and creamy cottage cheese.
