3 cups peeled and diced apples (Granny Smith or Honeycrisp)
2 tablespoons unsalted butter
1/3 cup brown sugar
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1 tablespoon cornstarch
1 tablespoon water
1 package puff pastry sheets, thawed
1 egg
1 tablespoon milk
Coarse sugar, for topping
1/2 cup caramel sauce (store-bought or homemade)
Instructions
In a saucepan over medium heat, melt butter and add diced apples, brown sugar, cinnamon, and nutmeg. Cook for 5–7 minutes until apples are tender.
Mix cornstarch and water in a small bowl, then stir into the apples. Cook another 2–3 minutes until thickened. Let cool completely.
Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
Roll out puff pastry and cut into even rectangles or circles. Spoon cooled apple filling onto one half of each piece, leaving space around the edges.
Fold over the pastry and seal the edges using a fork. Whisk egg with milk and brush tops of pies. Sprinkle with coarse sugar.
Bake for 20–22 minutes until golden brown and puffed. Let cool slightly, then drizzle generously with caramel sauce.
Notes
Chill filled pies before baking for a flakier crust.
Use store-bought caramel for quick prep, or make your own.
Make them vegan by using plant-based pastry and butter.
Serve warm with vanilla ice cream, whipped cream, or Greek yogurt.
