  • 1 lb boneless, skinless chicken breast (cut into bite-sized chunks)
  • 1/2 cup cornstarch
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp vegetable oil
  • 1/2 cup sweet chili sauce
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp honey (optional for extra sweetness)
  • 23 dried red chilies (or fresh slices for more heat)
  • 2 green onions, chopped
  • 1 tsp sesame seeds (for garnish)
  • Cooked white rice (for serving)

Instructions

  1. Toss chicken pieces in cornstarch, salt, and pepper until fully coated.
  2. Heat oil in a large skillet over medium-high. Add chicken and sear for 6–8 minutes until golden brown and fully cooked.
  3. In a bowl, whisk together sweet chili sauce, soy sauce, rice vinegar, and honey.
  4. Reduce heat, pour sauce over chicken, add dried chilies, and toss to coat. Let it simmer for 2–3 minutes until sticky and glossy.
  5. Plate it over hot white rice, sprinkle with sesame seeds and chopped green onions. Serve immediately.

Notes

  • For extra heat, use fresh slices of red chilies instead of dried.
