4 medium zucchinis, halved lengthwise
1 lb ground turkey or beef
1/2 onion, chopped
1 cup diced tomatoes (canned or fresh)
1/2 cup corn (optional)
1/2 cup red bell pepper, diced
1 tsp garlic powder
1 tsp Italian seasoning
Salt & pepper to taste
1 cup shredded mozzarella or cheddar cheese
2 tbsp olive oil
Fresh parsley or cilantro, chopped (for topping)
Instructions
Prep the Zucchini Base: Scoop out the center of each zucchini half to create a “boat.” Drizzle with olive oil, season with salt and pepper. Roast at 400°F for 10 minutes.
Cook the Flavor-Packed Filling: Sauté onion in a skillet, then add ground meat and brown fully. Toss in bell pepper, garlic powder, tomatoes, corn, and Italian seasoning.
Fill Those Boats: Spoon the cooked mixture into each zucchini boat.
Top With Cheese & Bake: Sprinkle generously with shredded cheese. Bake another 10–12 minutes until cheese is melted and bubbly.
Garnish & Serve It Up: Top with fresh parsley or cilantro.
