4 medium zucchinis, halved lengthwise
1 lb ground beef or turkey
1 small onion, finely chopped
1 red bell pepper, diced
2 cloves garlic, minced
1 cup marinara or pasta sauce
1 ½ cups shredded mozzarella cheese
2 tbsp olive oil
1 tsp Italian seasoning
Salt & pepper to taste
Fresh parsley or basil, chopped (for garnish)
Instructions
Prep the Zucchini Boats: Slice zucchinis in half lengthwise and scoop out the centers to form “boats.” Brush with olive oil and season with salt and pepper.
Cook the Filling: In a skillet over medium heat, sauté onion, garlic, and bell pepper until soft. Add ground meat and cook until browned. Season with Italian seasoning, salt, and pepper.
Add the Sauce: Stir in marinara sauce and simmer for 5 minutes.
Stuff the Zucchini: Spoon the meat mixture generously into each zucchini boat.
Top & Bake: Sprinkle with mozzarella cheese and bake at 375°F (190°C) for 20-25 minutes until bubbly and golden.
Notes
This dish is low-carb and can be made with either ground beef or turkey.
Feel free to add other vegetables to the filling for more flavor.
