Stuffed Zucchini Boats are a delicious low-carb dish filled with ground meat, vegetables, and topped with melted cheese, making it a perfect option for an easy weeknight dinner.

  • 4 medium zucchinis, halved lengthwise
  • 1 lb ground beef or turkey
  • 1 small onion, finely chopped
  • 1 red bell pepper, diced
  • 2 cloves garlic, minced
  • 1 cup marinara or pasta sauce
  • 1 ½ cups shredded mozzarella cheese
  • 2 tbsp olive oil
  • 1 tsp Italian seasoning
  • Salt & pepper to taste
  • Fresh parsley or basil, chopped (for garnish)

Instructions

  1. Prep the Zucchini Boats: Slice zucchinis in half lengthwise and scoop out the centers to form “boats.” Brush with olive oil and season with salt and pepper.
  2. Cook the Filling: In a skillet over medium heat, sauté onion, garlic, and bell pepper until soft. Add ground meat and cook until browned. Season with Italian seasoning, salt, and pepper.
  3. Add the Sauce: Stir in marinara sauce and simmer for 5 minutes.
  4. Stuff the Zucchini: Spoon the meat mixture generously into each zucchini boat.
  5. Top & Bake: Sprinkle with mozzarella cheese and bake at 375°F (190°C) for 20-25 minutes until bubbly and golden.

Notes

  • This dish is low-carb and can be made with either ground beef or turkey.
  • Feel free to add other vegetables to the filling for more flavor.
