A healthy and flavorful baked salmon dish stuffed with spinach and feta cheese, perfect for a nutritious dinner.

Ingredients

  • 4 salmon fillets (skin-on or skinless, your choice)
  • 1 cup fresh spinach, chopped
  • 1/2 cup crumbled feta cheese
  • 1/4 cup sun-dried tomatoes or roasted red peppers, chopped
  • 2 cloves garlic, minced
  • 2 tbsp cream cheese (softened)
  • 1 tbsp olive oil
  • Salt & cracked black pepper to taste
  • Lemon wedges, for serving

Instructions

  1. Preheat oven to 375°F. Line a baking sheet with parchment or lightly grease. Slice a pocket into each salmon fillet.
  2. In a bowl, combine spinach, feta, cream cheese, garlic, and red peppers. Mix until well combined.
  3. Spoon the filling generously into each fillet pocket. Season with salt and cracked black pepper. Drizzle lightly with olive oil.
  4. Bake for 18–20 minutes or until salmon flakes easily and stuffing is golden on top.
  5. Serve hot with lemon wedges and your favorite veggie or grain side.
