- 4 salmon fillets (skin-on or skinless, your choice)
- 1 cup fresh spinach, chopped
- 1/2 cup crumbled feta cheese
- 1/4 cup sun-dried tomatoes or roasted red peppers, chopped
- 2 cloves garlic, minced
- 2 tbsp cream cheese (softened)
- 1 tbsp olive oil
- Salt & cracked black pepper to taste
- Lemon wedges, for serving
- Preheat oven to 375°F. Line a baking sheet with parchment or lightly grease. Slice a pocket into each salmon fillet.
- In a bowl, combine spinach, feta, cream cheese, garlic, and red peppers. Mix until well combined.
- Spoon the filling generously into each fillet pocket. Season with salt and cracked black pepper. Drizzle lightly with olive oil.
- Bake for 18–20 minutes or until salmon flakes easily and stuffing is golden on top.
- Serve hot with lemon wedges and your favorite veggie or grain side.
