  • 1/2 cup rice, rinsed

  • 2 cups tomato sauce
  • 2 tablespoons olive oil

  • 1 teaspoon cumin
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon fresh mint, chopped
  • 1/2 teaspoon cinnamon
  • 1 cup water

Instructions

  1. Preheat the oven to 190°C. Carefully hollow out the round zucchinis using a spoon, leaving enough flesh around the edges.
  2. In a skillet, heat olive oil over medium heat. Sauté onion and garlic until soft and fragrant.
  3. Add ground beef and cook until browned. Stir in rice, paprika, cumin, cinnamon, salt, and black pepper.
  4. Fill each hollowed zucchini generously with the beef and rice mixture without overpacking.
  5. Spread tomato sauce into a baking dish and arrange the stuffed zucchinis inside. Pour water around them to keep everything moist while baking.
  6. Cover with foil and bake for 45 minutes. Remove the foil and continue baking for another 15 minutes until the zucchinis are tender and the sauce thickens beautifully.
  7. Finish with fresh parsley and mint before serving hot.
