Ingredients

1 tbsp olive oil
1 lb ground beef or chicken
1 small onion, diced
1 red bell pepper, chopped
1 yellow bell pepper, chopped
2 garlic cloves, minced
1 tsp smoked paprika
1/2 tsp dried oregano
Salt and pepper to taste
1 can (14 oz) diced tomatoes
1/2 cup tomato sauce
2 cups cooked bowtie pasta
1/2 cup shredded mozzarella or cheddar
Fresh parsley or green onions for garnish
Instructions
Heat olive oil, add onion and cook for 2 minutes. Add beef or chicken and cook until browned. Add peppers and sauté for 3–4 minutes. Stir in garlic, paprika, oregano, salt, and pepper.
Pour in diced tomatoes and tomato sauce. Simmer for 8–10 minutes.
Fold in cooked pasta and cheese. Cover and let melt for 2–3 minutes.
Serve topped with parsley or green onions and enjoy hot.
