Stuffed Pepper Casserole is an easy weeknight comfort food that brings together the flavors of stuffed peppers in a delicious, cheesy bake.

  • 1 lb ground beef
  • 1 cup uncooked white rice
  • 2 cups beef broth
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 small onion, diced
  • 1 can (14.5 oz) diced tomatoes (undrained)
  • 1 cup tomato sauce
  • 1 ½ cups shredded cheddar cheese
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • ½ tsp paprika
  • Salt & pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large skillet, cook ground beef with onion until browned. Add bell peppers and sauté for 4–5 mins.
  2. Stir in diced tomatoes, tomato sauce, beef broth, garlic powder, Italian seasoning, paprika, salt, and pepper.
  3. Stir in the uncooked rice and bring to a simmer for 2–3 minutes.
  4. Pour the mixture into a greased 9×13 casserole dish. Cover with foil and bake at 375°F for 35 minutes.
  5. Uncover, sprinkle with cheddar cheese, and bake for another 10 minutes until melty and golden. Finish with chopped parsley.

  • Adjust the seasoning according to your taste.
  • Can substitute ground beef with turkey or a plant-based option for a healthier alternative.
  • Leftovers can be stored in the refrigerator for up to 3 days.
