Melty, hearty, cheesy, and irresistibly comforting stuffed pasta shells filled with spinach and cheese.

  • 20 jumbo pasta shells
  • 1 tbsp olive oil
  • 2 cups fresh spinach (chopped)
  • 1 garlic clove, minced
  • 1 cup ricotta cheese
  • 1/2 cup shredded mozzarella
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste
  • 1/2 tsp dried basil
  • 2 cups marinara or tomato basil sauce
  • 1 cup shredded mozzarella (for topping)
  • Fresh basil or parsley, for garnish

Instructions

  1. Cook pasta shells al dente, drain, and rinse with cold water. Set aside.
  2. Heat olive oil in a pan, sauté garlic and spinach until wilted. Let cool slightly.
  3. In a bowl, mix ricotta, mozzarella, Parmesan, basil, spinach, salt, and pepper until smooth.
  4. Preheat oven to 375°F (190°C). Spread half the marinara sauce in a baking dish or oven-safe skillet.
  5. Fill each shell with ricotta-spinach mixture and place into the dish.
  6. Spoon remaining sauce on top and sprinkle with shredded mozzarella.
  7. Cover with foil and bake for 20 minutes. Remove foil and bake another 10 minutes until bubbly and golden.
  8. Garnish with fresh herbs and serve hot.
