Stuffed Chicken Breast with Spinach and Cheese

Juicy, cheesy, herby, and absolutely irresistible stuffed chicken breast filled with spinach and cheese.

  • 4 boneless skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 cups fresh spinach
  • 1/2 red bell pepper, finely diced
  • 2 garlic cloves, minced
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup cream cheese
  • 1/2 teaspoon dried oregano
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet, sauté garlic in a little olive oil until fragrant. Add spinach and bell pepper and cook until wilted. Let cool slightly.
  3. In a bowl, mix sautéed veggies with mozzarella, cream cheese, oregano, salt, and pepper.
  4. Cut a pocket into each chicken breast without slicing all the way through. Stuff with the prepared filling.
  5. Season the outside of the chicken with salt and pepper.
  6. Heat olive oil in an oven-safe skillet. Sear chicken on both sides until golden, about 3–4 minutes per side.
  7. Transfer skillet to oven and bake for 15–18 minutes or until chicken is cooked through.
  8. Let rest for a few minutes, then serve hot, garnished with chopped parsley.

Notes

  • Use a toothpick to seal the chicken if needed.
  • Don’t overstuff or the filling may spill too much.
  • For dairy-free version, use plant-based cheese alternatives.
  • Great for meal prep — store in airtight containers for up to 3 days.
