A delicious and easy recipe for stuffed bell peppers filled with seasoned ground beef and rice, topped with fresh tomatoes and parsley.

  • 6 large green bell peppers
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 500 g ground beef
  • 1 small onion, finely chopped
  • 3 garlic cloves, minced
  • 1 cup cooked rice
  • 2 tablespoons tomato paste
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • 1 teaspoon dried oregano
  • 1/2 teaspoon black pepper
  • 1 teaspoon salt
  • 2 cups tomato sauce
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 2 tomatoes, sliced
  • Fresh parsley, chopped

Instructions

  1. Preheat oven to 190°C (375°F). Cut the tops off the bell peppers and remove the seeds. Brush lightly with olive oil and sprinkle with salt.
  2. Heat a skillet over medium heat. Cook onion until soft, then add garlic and sauté until fragrant. Add ground beef and cook until browned. Mix in cooked rice, tomato paste, paprika, cumin, oregano, salt, and black pepper. Cook for 3-4 minutes until flavorful and well combined.
  3. Fill each bell pepper generously with the beef and rice mixture. Top each pepper with a tomato slice.
  4. Pour tomato sauce into the baking dish and stir in olive oil, paprika, and garlic powder. Arrange stuffed peppers in the dish. Cover with foil and bake for 40 minutes. Remove foil and bake another 15 minutes until the peppers are tender and juicy.
  5. Garnish with fresh parsley and spoon extra sauce over the peppers before serving.

Notes

  • Add shredded mozzarella cheese during the last 10 minutes for a cheesy finish.
  • Swap rice with quinoa for a healthier twist.
  • For extra richness, mix a little parmesan into the filling.
  • Serve with yogurt sauce or fresh salad for a complete meal.
