4 medium eggplants, halved lengthwise
500g ground beef
1 small onion, chopped
3 garlic cloves, minced
1 red bell pepper, diced
1 cup cherry tomatoes
2 tablespoons tomato paste
2 cups tomato sauce
3 tablespoons olive oil
1 teaspoon paprika
1 teaspoon cumin
1 teaspoon oregano
1/2 teaspoon chili flakes
Salt and black pepper to taste
1/4 cup chopped parsley
1/2 cup water
Instructions
Preheat the oven to 400°F (200°C). Scoop out part of the eggplant flesh to create space for the filling while keeping the shells intact. Brush with olive oil and place in a baking tray.
Heat olive oil in a skillet over medium heat. Sauté onion and garlic until fragrant. Add ground beef and cook until browned. Stir in diced bell pepper, chopped eggplant flesh, paprika, cumin, oregano, chili flakes, salt, and black pepper.
Mix in cherry tomatoes, tomato paste, and a little tomato sauce. Simmer for 5 minutes until the mixture becomes rich and flavorful.
Fill each eggplant generously with the beef mixture. Scatter extra cherry tomatoes and onion pieces on top for deeper roasted flavor.
Pour remaining tomato sauce mixed with water into the baking tray. Bake for 40-45 minutes until the eggplants are soft and beautifully roasted.
Sprinkle with fresh parsley before serving hot with rice, couscous, warm bread, or yogurt salad.

Serve with garlic yogurt sauce or tahini lemon dressing for extra Mediterranean flavor.
