3 medium eggplants
2 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon black pepper
500 g ground beef
1 small onion, finely chopped
3 garlic cloves, minced
1 cup tomato sauce
2 tablespoons tomato paste
1 teaspoon paprika
1 teaspoon oregano
1/2 teaspoon chili flakes
Salt and black pepper to taste
2 cups shredded mozzarella cheese
1/2 cup grated parmesan cheese
2 tablespoons chopped parsley
Instructions
Preheat oven to 200°C (400°F). Slice the eggplants in half lengthwise and scoop out a little flesh from the center. Brush with olive oil and season with salt and black pepper. Bake for 20 minutes until tender.
Heat a skillet over medium heat. Cook onion until softened, then add garlic and sauté until fragrant. Add ground beef and cook until browned. Stir in tomato sauce, tomato paste, paprika, oregano, chili flakes, salt, and black pepper. Simmer for 10 minutes until rich and flavorful.
Fill each baked eggplant half generously with the beef mixture. Top with mozzarella cheese and parmesan cheese.
Return to the oven and bake for 15-20 minutes until the cheese is melted, bubbly, and golden brown.
Sprinkle with fresh parsley and serve hot with rice, salad, or toasted bread.
Notes
For extra creaminess, spread ricotta cheese inside the eggplants before adding the beef filling.
Add mushrooms or diced peppers for more texture and flavor.
Swap ground beef with ground chicken for a lighter version.
For a low-carb meal, serve with roasted vegetables instead of bread or rice.
