Light, fruity, creamy and sweetly satisfying Strawberry Vanilla Cupcakes.

  • For the Vanilla Cupcakes:
    • 1 1/2 cups all-purpose flour
    • 1 1/2 teaspoons baking powder
    • 1/4 teaspoon salt
    • 1/2 cup unsalted butter, softened
    • 1 cup granulated sugar
    • 2 large eggs
    • 2 teaspoons vanilla extract
    • 1/2 cup whole milk
  • For the Strawberry Frosting:
    • 1/2 cup unsalted butter, softened
    • 2 cups powdered sugar
    • 1/4 cup fresh strawberry puree (strained)
    • 1/2 teaspoon vanilla extract
    • Pinch of salt
  • Topping:
    • Fresh strawberries
    • Decorative sugar pearls (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Line a cupcake pan with 12 liners.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In a large mixing bowl, cream the butter and sugar until fluffy.
  4. Add eggs one at a time, then stir in vanilla extract.
  5. Add dry ingredients in two parts, alternating with milk, mixing just until combined.
  6. Divide the batter evenly into liners, filling about 2/3 full.
  7. Bake for 18–20 minutes or until a toothpick inserted comes out clean. Let cool completely.
  8. In a bowl, beat butter until smooth for the frosting.
  9. Gradually add powdered sugar and mix until combined.
  10. Add strawberry puree, vanilla, and a pinch of salt. Beat until fluffy and pink.
  11. Pipe the frosting onto cooled cupcakes in swirls.
  12. Top each cupcake with a fresh strawberry and add sugar pearls if desired.

Notes

  • Use ripe, sweet strawberries for best frosting color and taste.
  • Sift powdered sugar for extra smooth buttercream.
  • Store in fridge for 3 days and bring to room temp before serving.
