Fruity, creamy, sweet and absolutely addictive Strawberry Shortcake Cheesecake Bars.

Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup melted butter
  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 tsp vanilla extract
  • 2 large eggs
  • 1 cup heavy cream
  • 2 tbsp powdered sugar
  • 1/2 tsp vanilla extract
  • 1 1/2 cups fresh strawberries, chopped
  • 1/4 cup sugar
  • 1 tbsp lemon juice
  • 1 tsp cornstarch mixed with 2 tbsp water
  • Whole strawberries and powdered sugar for garnish

Instructions

  1. Preheat oven to 325°F (160°C). Mix crumbs, sugar, and melted butter. Press into an 8×8 inch lined baking pan. Bake 10 mins. Cool.
  2. Beat cream cheese, sugar, and vanilla until smooth. Add eggs one at a time. Pour over crust and bake 25–30 mins. Cool completely and chill 3 hours.
  3. Whip cream with powdered sugar and vanilla until stiff. Spread over chilled cheesecake.
  4. Cook chopped berries, sugar, and lemon juice. Stir in cornstarch slurry. Simmer until thick. Cool.
  5. Top cheesecake with strawberry sauce. Garnish with whole berries and powdered sugar. Slice and serve chilled.

Notes

  • Drizzle with extra berry coulis or lemon zest.
  • Pair with Greek yogurt or coconut whip for a lighter treat.
  • For a gluten-free option, use GF biscuits in the base.
