2 cups all-purpose flour
4 large eggs
2 1/2 cups whole milk
1/2 cup melted butter
3 tablespoons sugar
1 teaspoon vanilla extract
Pinch of salt
2 cups heavy whipping cream
1/2 cup powdered sugar
250g mascarpone cheese
1 teaspoon vanilla
2 cups fresh strawberries, finely chopped
1/4 cup strawberry jam (optional)
1 cup crushed puff pastry flakes or delicate cookie crumbs
Extra whole strawberries (for topping)
Powdered sugar (for dusting)
Instructions
In a bowl, whisk flour, eggs, milk, melted butter, sugar, vanilla, and salt until smooth. Chill batter 30 minutes.
Heat a non-stick pan over medium heat and lightly butter. Pour thin layer of batter, swirl evenly, cook 1 minute per side. Repeat to make 20–25 thin crepes. Cool completely.
Whip heavy cream with powdered sugar until soft peaks form. Gently fold in mascarpone and vanilla until smooth and creamy.
Place one crepe on serving plate. Spread thin layer of cream and sprinkle chopped strawberries.
Repeat layering until all crepes are stacked.
Lightly frost outside with remaining cream and press crushed pastry flakes around edges.
Top with whole strawberries and dust with powdered sugar.
Chill at least 2 hours before slicing for perfect layers.
