Ingredients

  • 2 cups cream cheese (softened)
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 1/2 cup heavy cream (cold)
  • 1 cup crushed vanilla cookies or graham crackers
  • 2 tbsp butter, melted
  • 2 tbsp freeze-dried strawberries, crushed (optional but amazing)
  • 3/4 cup strawberry jam or strawberry sauce
  • Fresh mint, for garnish (optional)

Instructions

  1. In a large bowl, beat softened cream cheese, powdered sugar, and vanilla until smooth and creamy.
  2. In a separate bowl, whip cold heavy cream to stiff peaks.
  3. Gently fold whipped cream into the cream cheese mixture until fully combined.
  4. Scoop mixture using a cookie scoop or spoon and shape into bite-sized balls. Freeze for 1 hour until firm.
  5. Meanwhile, mix crushed cookies, melted butter, and freeze-dried strawberries to make the coating.
  6. Roll the firm cheesecake bites in the crunchy coating until fully covered.
  7. Top each bite with a spoonful of strawberry jam or sauce.
  8. Garnish with mint leaves and serve chilled.

Notes

  • Use freeze-dried strawberries in the coating for real crunch flavor.
  • Don’t skip freezing the bites before coating—they hold shape better.
  • Store in an airtight container in the fridge up to 4 days.
