  • 1 tablespoon baking powder

  • 2 large eggs
  • 1 3/4 cups milk
  • 1/4 cup melted butter
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream
  • 2 tablespoons powdered sugar
  • 1/2 cup strawberry puree
  • 1 cup fresh strawberries, chopped
  • Powdered sugar for dusting
  • Chopped almonds (optional)

Instructions

  1. In a bowl, whisk flour, sugar, baking powder, and salt.
  2. In another bowl, whisk eggs, milk, melted butter, and vanilla.
  3. Pour wet ingredients into dry and mix gently until just combined (do not overmix).
  4. Heat a non-stick skillet over medium heat and lightly grease. Cook pancakes 2–3 minutes per side until golden and fluffy.
  5. Whip heavy cream with powdered sugar until soft peaks form. Fold in strawberry puree for a light pink cream.
  6. Stack pancakes, spoon strawberry cream between layers and let it gently drip down the sides.
  7. Top with fresh strawberries, dust with powdered sugar, and sprinkle almonds.
