- 1/2 cup powdered sugar
- 1/2 tsp vanilla extract
- 1/2 cup crushed graham crackers
- 1/2 cup freeze-dried strawberries, crushed
- 10–12 fresh strawberries, hulled and halved
- 1 cup white chocolate chips (for coating)
- Optional: red velvet crumbs or extra graham cracker dust for garnish
- Whip the cream cheese, powdered sugar, and vanilla until smooth.
- Scoop 1 tbsp of cheesecake mixture, flatten slightly, press a strawberry half inside, and roll into a ball.
- Freeze the truffle balls for 20–30 minutes.
- Melt white chocolate chips and coat each ball evenly. Roll in crushed freeze-dried strawberries or graham cracker crumbs.
- Decorate with extra white chocolate drizzle and crumbs. Chill for 10 more minutes before serving.
