  • 250 g digestive biscuits or graham crackers, crushed
  • 120 g unsalted butter, melted
  • 500 g cream cheese, room temperature
  • ¾ cup sugar
  • 2 large eggs
  • 1 cup heavy cream or sour cream
  • 1 teaspoon vanilla extract
  • 250 g fresh strawberries, sliced (plus extra for topping)
  • Pinch of salt

Instructions

  1. Preheat oven to 170°C (340°F). Line a square baking pan with parchment paper.
  2. Mix crushed biscuits with melted butter. Press firmly into the pan to form the crust. Chill for 10 minutes.
  3. In a bowl, beat cream cheese and sugar until smooth and creamy.
  4. Add eggs one at a time, mixing gently. Stir in cream, vanilla, and salt.
  5. Fold in sliced strawberries carefully.
  6. Pour filling over the crust and smooth the top.
  7. Bake for 40–45 minutes until edges are set and center slightly jiggles.
  8. Cool completely, then chill for at least 3 hours. Slice into bars and top with fresh strawberries.
