- 250 g digestive biscuits or graham crackers, crushed
- 120 g unsalted butter, melted
- 500 g cream cheese, room temperature
- ¾ cup sugar
- 2 large eggs
- 1 cup heavy cream or sour cream
- 1 teaspoon vanilla extract
- 250 g fresh strawberries, sliced (plus extra for topping)
- Pinch of salt
- Preheat oven to 170°C (340°F). Line a square baking pan with parchment paper.
- Mix crushed biscuits with melted butter. Press firmly into the pan to form the crust. Chill for 10 minutes.
- In a bowl, beat cream cheese and sugar until smooth and creamy.
- Add eggs one at a time, mixing gently. Stir in cream, vanilla, and salt.
- Fold in sliced strawberries carefully.
- Pour filling over the crust and smooth the top.
- Bake for 40–45 minutes until edges are set and center slightly jiggles.
- Cool completely, then chill for at least 3 hours. Slice into bars and top with fresh strawberries.
