Delicious and creamy Strawberry Cheesecake Bars with a Golden Oreo crust, perfect for summer desserts.

Ingredients

  • 1 package Golden Oreos (about 36 cookies), crushed
  • 6 tbsp unsalted butter, melted
  • 16 oz (2 blocks) cream cheese, softened
  • ½ cup granulated sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 tbsp lemon juice
  • ¾ cup strawberry jam or compote
  • ½ cup chopped strawberries (optional)
  • Extra Golden Oreo pieces, crumbled or halved for topping

Instructions

  1. Make the Crust: Mix crushed Golden Oreos with melted butter until sandy. Press firmly into a parchment-lined 9×13 pan. Bake at 350°F (175°C) for 8 minutes.
  2. Whip Up the Cheesecake Layer: Beat cream cheese until silky, then add sugar, vanilla, eggs, and lemon juice. Pour over baked crust.
  3. Swirl It Up: Drop spoonfuls of strawberry jam over the cheesecake layer. Swirl gently with a knife or toothpick. Add chopped strawberries if using.
  4. Top with Oreos & Bake: Sprinkle crushed or halved Golden Oreos right on top. Bake for 25–30 minutes until edges are set and center slightly jiggles.
  5. Chill & Slice: Cool completely, then refrigerate at least 2 hours before slicing.

Notes

  • These bars are best served cold.
  • For a more intense strawberry flavor, use fresh strawberries in addition to the jam.
  • Store leftovers in the refrigerator for up to 5 days.
