2 large chicken breasts
2 tablespoons olive oil
3 garlic cloves, minced
salt and pepper to taste
1 teaspoon smoked paprika
1 teaspoon chili flakes
1/2 cup fresh orange juice
2 tablespoons honey
2 tablespoons soy sauce
1 tablespoon mustard
1 teaspoon grated ginger
1 teaspoon cornstarch mixed with 2 tablespoons water
1 orange, sliced
fresh rosemary sprigs
Instructions
Preheat oven to 200°C. Slice the chicken breasts partially across the top to allow flavors to seep in. Rub with olive oil, garlic, salt, pepper, paprika, and chili flakes.
In a small saucepan, combine orange juice, honey, soy sauce, mustard, and ginger. Bring to a simmer, then add the cornstarch mixture. Stir until the sauce thickens into a glossy glaze.
Place chicken in a baking dish. Tuck orange slices and rosemary around and under the chicken. Pour half of the glaze over the chicken, making sure it gets into the slices.
Bake for 25-30 minutes, basting halfway through with more glaze. Cook until chicken is tender and caramelized on top.
Remove from oven and brush with remaining glaze for a shiny finish. Let rest for a few minutes before serving.
Notes
Swap honey with maple syrup for a different sweetness profile.
Add steamed vegetables or quinoa for a balanced healthy meal.
Use low sodium soy sauce for a lighter option.
For a gluten-free version, replace soy sauce with tamari.
