Delicious sticky orange glazed chicken, perfect for a quick family-friendly dinner.

  • 2 large chicken breasts
  • 2 tablespoons olive oil
  • 3 garlic cloves, minced
  • salt and pepper to taste
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili flakes
  • 1/2 cup fresh orange juice
  • 2 tablespoons honey
  • 2 tablespoons soy sauce
  • 1 tablespoon mustard
  • 1 teaspoon grated ginger
  • 1 teaspoon cornstarch mixed with 2 tablespoons water
  • 1 orange, sliced
  • fresh rosemary sprigs

Instructions

  1. Preheat oven to 200°C. Slice the chicken breasts partially across the top to allow flavors to seep in. Rub with olive oil, garlic, salt, pepper, paprika, and chili flakes.
  2. In a small saucepan, combine orange juice, honey, soy sauce, mustard, and ginger. Bring to a simmer, then add the cornstarch mixture. Stir until the sauce thickens into a glossy glaze.
  3. Place chicken in a baking dish. Tuck orange slices and rosemary around and under the chicken. Pour half of the glaze over the chicken, making sure it gets into the slices.
  4. Bake for 25-30 minutes, basting halfway through with more glaze. Cook until chicken is tender and caramelized on top.
  5. Remove from oven and brush with remaining glaze for a shiny finish. Let rest for a few minutes before serving.
